
From Isa Does It - one of my most-used cookbooks. To make this weeknight friendly, I make the tofu in the oven instead of frying it (olive oil, salt and pepper, on a sheet pan at 425 for about 30 minutes). I also like to toss a couple handfuls of spinach (fresh or frozen) right into the sauce while it cooks instead of steaming it separately. Even my kids like this, minus the green stuff.
